Method
- Preheat oven to 375°F (190°C).
- In a bowl, mix chopped peaches with sugar and cinnamon.
- Roll out the puff pastry on a floured surface until about 1/8 inch thick.
- Cut the pastry into 4-inch squares.
- Place a spoonful of peach filling in the center of each square, fold corners towards the center, and pinch to seal.
- Brush each cruffin with egg wash and bake for 20-25 minutes until golden brown.
