  • ½ teaspoon salt
  • 6 tablespoons unsalted butter chilled and cut into small pieces
  • ¼ cup boiling water
  • 3 tablespoons white sugar
  • 1 teaspoon ground cinnamon

  3. Mix the Peach Filling: Combine peaches, sugars, spices, lemon juice, and cornstarch. Bake in a 2-quart dish for 10 minutes.
  4. Prepare the Cobbler Topping: Mix flour, sugars, baking powder, and salt. Cut in butter until crumbly. Stir in boiling water.
  5. Add Topping and Sprinkle: Drop topping over peaches, then sprinkle with cinnamon sugar.
