Method
- Melt butter over medium heat, stirring until golden brown. Let cool 10–15 minutes.
- Combine sugars with cooled brown butter, then whisk in egg, yolk, and vanilla.
- Stir in sourdough discard, then mix flour, baking soda, powder, salt, and cinnamon into wet ingredients.
- Fold in chocolate chips. Chill dough 2–72 hours. Preheat oven to 350°F, scoop dough into balls, bake 10–12 minutes.
- Top with extra chocolate, shape with cookie cutter if desired. Cool 5 minutes on sheet, then transfer to rack. Sprinkle with sea salt if using.
