Brown Butter Sourdough Discard Chocolate Chip Cookies

Ingredients
  

  • 1 cup unsalted butter
  • 1 cup light brown sugar packed
  • 1/2 cup granulated sugar
  • 1 large egg + 1 large egg yolk eggs
  • 1/2 cup sourdough discard unfed
  • 1 teaspoon vanilla extract
  • 2-1/3 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1-1/2 cup dark or semi-sweet chocolate chips or chopped chocolate plus extra for topping
  • flaky sea salt for garnish (optional)

Method
 

  1. Melt butter over medium heat, stirring until golden brown. Let cool 10–15 minutes.
  2. Combine sugars with cooled brown butter, then whisk in egg, yolk, and vanilla.
  3. Stir in sourdough discard, then mix flour, baking soda, powder, salt, and cinnamon into wet ingredients.
  4. Fold in chocolate chips. Chill dough 2–72 hours. Preheat oven to 350°F, scoop dough into balls, bake 10–12 minutes.
  5. Top with extra chocolate, shape with cookie cutter if desired. Cool 5 minutes on sheet, then transfer to rack. Sprinkle with sea salt if using.

Notes

For the best flavor, use high-quality chocolate and don't overbake.
