Ingredients
  

For the Crust
  • 4 cups fresh peach slices
  • 3/4 cup granulated sugar
  • 1/4 cup ClearJel
  • 1/8 teaspoon salt
  • 1 cup water
  • 1/2 tablespoon bottled lemon juice
Flaky Pie Crust

Method
 

  1. Preheat oven to 375°F (190°C). Prepare the pie crust according to the recipe instructions.
  2. In a large bowl, combine peach slices, granulated sugar, ClearJel, and salt. Let sit for 15 minutes to allow peaches to release their juice.
  3. Add water and lemon juice to the peach mixture, stirring gently to combine. Pour the filling into the pie crust.
  4. Cover with the top crust and crimp edges to seal. Cut slits in the top to vent steam.
  5. Bake for 45-50 minutes, or until crust is golden and filling is bubbly. Let cool before serving.

Notes

For the best flavor, use fresh, ripe peaches. If using frozen peaches, thaw and pat dry before using.
